How To Cook Chicken Pineapple Recipe
Chicken Pineapple Recipe Ingredients:
  • 2 pounds chicken legs and thighs
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, cut into thin strips
  • 1 can Del Monte pineapple tidbits, with reserve syrup
  • 1 medium bell pepper, diced
  • 1/2 cup coconut milk
  • 2 cups water
  • 1 piece chicken bouillon cube, crushed
  • 2 tablespoons fish sauce or patis 
  • 1/4 teaspoon peppercorns
  • 2 tablespoons vegetable oil
  • salt and pepper
In a large skillet, heat the oil.

Saute the garlic, onions, and ginger.

Add in the peppercorns and chicken pieces.
Turn and cook the other side.
Cover and cook until meat is fully done, not bloody inside, and tender.
Season with salt and pepper.

Add the chicken cube.

Add the fish sauce or patis.

Add the peppercorns.

Add the pineapples with reserved syrup.
Add the coconut milk.
Simmer for 20 minutes or until chicken is tender.

Add red bell peppers and bay leaves.  Cover and simmer for a minute.
Serve Chicken Pineapple Recipe with steamed white rice.
